Ingredients
  

Ground Turkey Meatloaf
  • 1.25 lb 85/15 Ground Turkey
  • 3 oz Panko
  • 1 Large Egg
  • 1/3 cup Whole Milk
  • 1/2 tbsp Worcestershire Sauce
  • 3 oz Yellow Onions
  • 1/4 tbsp Coarse Kosher Salt
  • 1/4 tsp Black Pepper
  • 1/2 oz Ketchup
  • 1/4 tbsp Granulated Garlic
Tangy Tomato Onion Sauce
  • 2.25 oz Ketchup
  • 1/3 oz Yellow Onions
  • 1/4 oz Light Brown Sugar
  • 1/4 oz Apple Cider Vinegar
Italian Green Beans and Onions
  • 1.75 lbs Italian green beans trimmed
  • 1/8 lbs yellow onion
  • 1 Pat of unsalted butter melted
  • 1/8 tsp granulated onion
  • 1/8 tsp granulated garlic
  • 1/8 tsp black pepper
Roasted Red Potatoes
  • 1.5 lbs red potatoes
  • 1/8 tsp coarse kosher salt
  • 1/8 tsp black pepper
  • Extra virgin olive oil to toss
  • Paprika to taste

Method
 

Meatloaf
  1. Roast onions and bring to room temperature
  2. In a separate bowl, combine panko, milk, Worcestershire sauce, eggs, and mix thoroughly.
  3. In a bowl, mix the panko mixture with the ground turkey, roasted onions, salt, pepper, and garlic.
  4. Separately, sauté Tomato Onion Sauce onions until translucent on medium heat. Add brown sugar until dissolved and deglaze the pan with the apple cider vinegar. Reduce liquid to half and then add ketchup and bring to simmer. Let stand and cool.
  5. Portion the ground beef mixture into 4 oz loaves and roast for 15 minutes at 375 degrees. Top each loaf with 1 oz of the Tangy Tomato Onion Sauce for Meatloaf, and then roast again for another 5 minutes. Cool and refrigerate.
Roasted Red Potatoes
  1. Cut potatoes into large ¾" dice. Toss into a bowl with oil and season with salt, pepper, and paprika.
  2. Spread onto a sheet pan and roast in oven at 375 degrees for 15-20 minutes.
  3. Cool before serving.
Italian Green Beans
  1. Mix thawed or drained green beans with melted butter
  2. Roast onions for 10-15 minutes on 400 degrees. Let cool slightly.
  3. While warm, mix all ingredients evenly and add herbs and spices. Serve.
