Ingredients
  

Kung Pao Chicken
  • 1.5 lb Boneless Skinless Chicken Thighs
  • 1/2 oz Cornstarch
  • 1/3 fl oz Water
  • 2/3 fl oz Soy Sauce
  • 2/3 fl oz Seasoned Rice Vinegar
  • 1/3 fl oz Toasted Sesame Seed Oil
  • 2/3 oz Light Brown Sugar
  • 1/3 oz Minced Garlic
  • 2/3 fl oz Canola Oil
  • 5 oz Diced Green Bell Peppers
  • ¼ lb Matchstick Carrots
  • 1.5 oz Thinly Sliced Green Onions
Cilantro Brown Rice
  • 7 oz Parboiled long grain brown rice
  • 18 oz Hot water
  • 1/2 oz Chopped cilantro
  • 1/2 oz Green onions cut on bias
Broccoli with Matchstick Carrots
  • 1/4 lb Matchstick carrots
  • 1 2/3 lb Frozen broccoli florets
  • 1/4 tbsp Kosher salt
  • 1/8 tsp Black pepper

Method
 

Kung Pao Chicken
  1. On a pan, roast chicken at 375 degrees for 35-38 minutes or until chicken reaches 165 degrees. While the chicken is roasting, prepare the sauce below.
  2. In a medium sized bowl, combine corn starch, water, soy sauce, rice wine vinegar, sambal, sesame oil, brown sugar, minced garlic, and canola oil. Whisk until blended. Set sauce aside for flavors to combine.
  3. Once chicken is cooked and cooled, mix chicken with the sauce. Add any flavors to taste.
Cilantro Brown Rice
  1. Place rice into a shallow baking dish and add hot water. Cover the dish with foil, following in a pilaf method.
  2. Bake in oven at 375 degrees for 45 minutes. Remove from oven and let sit, covered, for another 30 minutes or until softened to preference.
  3. Add green onions and chopped cilantro to taste. If you like, you can add sesame or other herbs to season further.
Broccoli with Matchstick Carrots
  1. Preheat oven to 375 degrees. Place broccoli florets and carrots on sheet pan, and season with salt and pepper.
  2. Bake for 12-15 minutes, then cool before plating with Cilantro Brown Rice, topped with the Kung Pao Chicken and Broccoli and Carrots on the side.
